He is still in Newcastle in the 1851 Census with an age given of 62yrs. This makes his birth as about 1789 and means that the approx birth year and parents details given in your original post appear to have been complete random guesses.
There is no point in looking any further unless you know definitely that the George Thompson living in the All Saints Parish in the 1841 Census is your 4th Great Grandfather. Sorry to sound rude but, is this definite and backed up by relevant birth/marriage certificates, Census records etc leading up to him through the generations or also just guess work ?

If the 1800 baptism of Jane is the correct family then this was during the Barrington era, when additional details were recorded. The baptism says the following:
Jane Thompson born 30 Nov [1799] baptised 4 Feb [1800] 2nd daughter of John Thompson, Master Mariner, native of Gateshead & his wife Eleanor d/o George Cram, Shipwright of this chapelry

George & Catherine appear to have married at All Saints on 28 Oct 1811. The first child I can see is Ralph, baptised as follows:
13 Feb 1813 Ralph s/o George & Catharine Thompson, North Shields, Pavier.
