The baptisms and marriages are available online on the NLI site, but the burials are not. Does that mean the records don't exist anymore?

Depends which religion you're talking about.
From what I can see:
Church of Ireland - listed under Saintfield - earliest records (type not specified) begin 1724. Records held 'in local custody'.
Roman Catholic - under Saintfield it says 'see Killinchy' and then says Carrickmannan and Saintfield. Earliest baptism records begin 1845. Records held in local custody, National Library of Ireland, and Ulster Historical Foundation.
Presbyterian - listed only under Killinchy, earliest records 1835. Held at Ulster Historical Foundation, and Public Record Office of Northern Ireland in Belfast.
Methodist - you will need to find out which circuit Carricmannan/Saintfield was in. Records held in local custody or at Down Ancestry, which is a heritage site.

The NLI registers are Roman Catholic registers so hence baptism and marriages. The Irish RC church was less interested in recording burials and very few churches in the 19th century had burial registers, hence not listed. And those that do exist tend to be patchy.
