My Dad's service number seems to indicate that he was originally assigned to the Prince of Wales Volunteers. However his paperwork states that he was conscripted to the 8th South Lancashire Regiment on 15/01/1942 until 27/12/1942. He was then transferred to the Royal Artillery on 28/01/1942 until 22/01/1947 as a Signaller. I know he served throughout Europe, including the Normandy landings (not on day 1, I seem to recall), was involved in the liberation of Bergen-Belsen and spent some time in Palestine. Is there a way I can find out which regiment he was in and find exactly where he went and when?

As Robert has said you can apply for your father's service records from the MOD who still hold them They are not available on line.
The National Archives has very good research guides Here. Just click on the red menu circle centre top for the drop down menu.
This is where you apply for the records.
