Welcome to British-Genealogy brightlight
You are going to have to give us some more information about your William Mellor(s) so we can help you.
Where was he born? Do you have him in any of the census? Which of the death records is his on FreeBMD. There is only one suitable record for a William Mellors in 1871 aged 90 but there are many for William Mellor without the s and I think this could apply to other records also. So a little more information on what you already have and exactly what it is you are wanting would be good.

I'm assuming the baptism you refer to is that of a William MELLORS on 29 June 1794 at Hucknall Torkard, Notts, father Jon mother Elizabeth (source IGI Family Search). This is verified by an entry on the Notts FHS Baptismal Index for William MELLOR son of John and Elizabeth on 29 June 1794 at Hucknall Torkard St Mary. Other baptisms at Hucknall Torkard St Mary for children of a John & Elizabeth MELLOR (also from the Index) are John baptised 25 Jan 1789, William baptised 9 Jan 1791, Ann baptised 13 Jan 1793, Elizabeth baptised 12 Jan 1794, George baptised 16 Apr 1797, John baptised 13 May 1798, Hannah 14 Oct 1798, Ann 22 Dec 1811. Also a Leah MELLORS baptised 27 Apr 1796, William MELLORS baptised 9 March 1800 and Francis MELLORS baptised 8 Nov 1807.

From Notts FHS Marriage Index:
7 September 1788 at Hucknall Torkard St Mary John MELLORS & Elizabeth NEWTON
10 November 1793 at Hucknall Torkard St Mary John MELLORS & Elizabeth SPRAY
So it looks as if there may have been 2 John & Elizabeth MELLORS having children in Hucknall Torkard which will probably complicate your research.
How have you managed to get back to your William having been born c1794 in Nottingham? What was the occupation of your William & was he likely to have been apprenticed? Have you found him in any census records? Is he the William MELLORS born c1798 Hucknall, married to a Mary & living in Handsworth Yorkshire in the 1871 census for example? Sorry for all the questions, but unless we have the definite details you have already found for your William such as his marriage, his death, his children and where they were born/baptised, etc. as Christina has already said, it is a bit like looking for a needle in a haystack.

If you have already proved that the Samuel MELLORS who married Winifred SHERIDAN is your direct ancestor, then according to his parish register marriage record, available to view on Ancestry, his father William MELLORS was a Blacksmith. The full entry reads:
12 September 1583 at St Helens Samuel MELLORS, aged 25, bachelor, Labourer, of St Helens, father William MELLORS, Blacksmith & Winifred SHERIDAN, aged 27, spinster, of St Helens, father John SHERIDAN, Labourer. Winifred made her mark and the witnesses were Peter & Mary Ann PINKITH or PENKETH?
The 1861 census of Sutton, St Helens shows his birthplace as Northamptonshire & the 1871 as Nottinghamshire, so not much help there. Given the fact that Samuel states that his father William was a Blacksmith on his marriage record, your line of progression is more likely to be the William MELLORS that Christina found for you in post 3, i.e. William MELLORS born c1794 in Hallam.
I think you need to try to trace back your Samuel in the 1841 & 1851 census records and hopefully find him with his father William, a Blacksmith.
