I've found Joseph & Ann Payne, my GGG grandparents, and their children living in Weeton with Preese from the 1851 census but I'd like to find solid evidence of their birthdates and parents before 1851.
Ann's maiden name was Billington and she moved to Barrow sometime after Joseph died (1880), where most of her family now lived. I've got census results of their kids, Richard, Thomas, & John, who moved there
Their son William Henry Payne b1854 (my GGgrandfather) moved to New Zealand sometime before October 1881 when his marriage was recorded in Wellington.
Any help or direction on where to go next to find out more about Joseph and Ann and the families from whence they came would be greatly appreciated.

Have I found the right Ann in 1881? She's a widow, 56, Ag Lab General, [B]b Woodplumpton, Lancs[/B,]with an unmarried daughter Alice, 24, Gen Serv, and an 11 yr old son Thomas [RG11/4250/64/P9]
On IGI, there is a baptism;
Ann BILLINGTON 10 Dec 1826 Woodplumpton, Lancs, parents Thomas BILLINGTON and Mary

You've got the correct people above except the baptism doesn't quite fit in. And in my ageing decline (mid-30s!) I forgot that I had ordered the birth cert and hadn't entered it into my computer!
So here's what info it gave:
Joseph PAYNE marr. Ann BILLINGTON
22 Aug 1844
both occupations listed as Servants at Preese Hall in Weeton
Joseph's father is John PAYNE
Ann's father is William BILLINGTON
Marr. at ??? Chapel, Kirkham by ?? Walmsley
Religion: RCatholic
Witnesses: Richard Gillet & Ann Fairclough
How would I access parish records to find more about John and William?

Ah...
OK, if they were Catholic, that's a whole different ball game. I personally know very little about Rc records, though there are some real experts here.
Having said that though, there is this possibility on IGI:
Anna BILLINGTON b 18 Oct 1824, christened 19 Oct 1824 Salwick by Lea -Rc, Lea by Kirkham. Parents Gulielmi BILLINGTON and Margaritae.
Latin names= Ann, William and Margaret.

Josephus PAIN or COOKSON b 10 Sep 1822 ch 11 Sep 1822, Mowbreck Or The Willows - Rc, Wesham, Lancs. Parents Joanne PAIN and Anna COOKSON. [Batch No P011491]
Latin names = Joseph, John and Ann.
Wisham is next to Kirkham.
