There appears to be a birth certificate available for their son George b 1841.
What is shown for the mother's name and previous names?
You do have the birth certificate, don't you?
So many questions can be answered from readily obtainable documents.

Cancel that! I think You say you have the certificate and her maiden name is shown as Handley. So that suggests her mother was unmarried or she married again. Are there any Hand(l)ey / Day marriages around in the right place at the right time?
BTW it's not unusual for a bride to provide her stepfather's name rather than her biological father's name.

The marriage "cert" is on line. However, the Vicar, Joseph Golding, continued to use the pre. 1 July 1837 marriage form beyond that date until Lucy's marriage. Hers was the last - although there were blanks still in the register. Had joseph finally twigged? So, what went through to the GRO?.
Disappointed - had hoped to spot Joseph Day's occupation."dyfal donc a dyr y garreg"

As Lucy was stated as being a servant, I suspect that she was not born in the same place as the wedding took place or even in that county. On Ancestry is a tree showing that Lucy Handy was born abt 1816 in Toddington, Gloucestershire. There is also a photograph of George Ell, the son.
