We have a bunch of GILBERT on our lists in Malta...
Could those two (father and son) maybe be related to the family you are looking for ??

John George GILBERT, 21+, bachelor, smith at HM Dockyard, married 5th January 1839, to Mary Jane PROUT, 21+, spinster, of Woolwich, Kent

John George GILBERT, born 2nd November 1839, the son of John and Mary Jane Gilbert
    British resident in Malta

Here is a Haynes that spent some time in Malta and could be related : https://crimeanwar-veteranswa.com/ve...enry-benjamin/

I am looking for a GILBERT infant who died in 1818. The plaque of the grave is lost in our cemetery and he/she doesn't appear on any birth records, because he died before being baptised

Do you still have other cemetery records? It is possible, in some areas of Scotland, to find records of the payment of grave diggers, for example. Could it be the same for your cemetery?
