Have you found a record of the registration of Ellen Eleanor's birth?
From GRO Index it looks as if Ann Elizabeth's birth was recorded in March Q 1889 in Wandsworth. Mmn Enniss.
Henrietta Jane . June Q 1891. Wandsworth. Mmn Enniss

Still looking for a marriage ( if they married!)

Looking on Family Search, the surname Dundon appears to be most frequently associated with Ireland. Might Enniss be Innes?

Have you found the couple on an English/ Welsh census?

Looking at the original return of the 1911 Census, Henrietta said that she had been married for 30 years, and had had 7 children, 3 of whom were still alive.

So on that basis she married around 1881.

I can't see a marriage in England or Wales that fits.

Checking for births of Dundon children whose mother's maiden name was Enniss, I can only find 3:

Ellen Elizabeth 1886 Qtr D Wandsworth Vol1D Page 619 Mother Enniss
Ann Elizabeth 1889 Qtr M Wandsworth Vol1D Page 575 Mother Enniss
Henrietta Jane 1891 Qtr J Wandsworth Vol1D Page 621 Mother Enniss

Henrietta Enniss was born in 1851 in Chelsea and she can be found on the 1851 and the 1881 censuses with her father and family:
    1851 - Piece 32 Folio 45 Page 41
    1881 - Piece 78 Folio 128 Page 38

In the 1881 Census there is an 8 year old grand-daughter called Catherine Henrietta, who appears to be illegitimate. I wonder if she was Henrietta's daughter. She went on to marry in 1891 an Edward Casey at the Battersea Park Catholic church, where she said her father was a Henry Enniss.

Catherinam Henrietta Ennis (father Henrici) and Eduardum Casey (father Dionysis), Battersea Park, Our Lady of Mount Carmel & St Joseph, 2 Aug 1891 - witnesses Joseph and Brigitte Sweet

    GRO Birth Registration
Catherine Henrietta Enniss, Jun Qtr 1872, Chelsea, 1A 272 - no mother's maiden name

    1881 Census (ref RG11 78 128 38)
    Address 6 Morbys Yard,Chelsea
Thomas Enniss, Head, Widower, 70, Roadman, born Chelsea
Henrietta Enniss, Dau, Single, 29, Laundree, born Chelsea
Catherine Henrietta Enniss, Grand -dau, 8, born Chelsea

Mother and daughter proving somewhat elusive in 1891!
