Information:
The Findmypast website now has the Parish Registers & Probate Records for Leicestershire online.
Unfortunately the Parishes of Buckminster & Castle Donington are not included.
My only Leicestershire ancestors are in Castle Donington and I have asked the record office why the parish is missing.

According to genuki.org.uk, the Anglican register and Bishop's transcript both survive from 1563. They give details about the other denominations as well.

Yes, the Record Office has the registers, I was viewing them last week. I didn't go in too deeply as I knew the county was going online. Think I might have jinxed myself

If you give FMP time, eventually they may be available online through their site. It isn't the case, that all will appear at the same time, but will gradually be added to over time.
Ancestry said the same thing with Buckinghamshire & Oxfordshire.........and they still haven't finished that at present. It's a mammoth task, when you think of it. So be patient.Too many bones, too much sorrow, but until I am dead, there's always tomorrow.

Fair enough. They have actually uploaded the entire county - just those two parishes missing - I feel there must be some reason why!
