I am trying to find out the history of the public houses in Appleton (was Berks until 1974) now Oxfordshire.
I have a list of some of the landlords, but would be interested to know more about the buildings themselves. Anyone any idea how to find this sort of information out please?

Licensing registers are an obvious source that springs to mind. With any luck the record office (whichever one it might be) may have a good run of licensing registers. These are dead easy to use and provide the details of the premises, the licensee, any changes during the year, the owner (usually a brewery) and, particularly interesting, any trouble that may have been brought to the attention of the police. The registers may get you back to the 1870s.
You probably want to look up the history of licensing legislation because there's a period from 1830ish to 1879ish where licensing registers are fairly incomplete but other sources (eg rates) may help to fill the gap. You must already have discovered how easy it is to extract information from census returns for a small village.

Listed?
If it's the Thatched Tavern Public House, it is a listed building. Info here: https://www.britishlistedbuildings.co...-house-appleto.

Newspapers are often a very good source. For example, Appleton appears to have two pubs - the Plough and The Three Horseshoes. These appear on the 1876 map.
The Oxford Journal, 9 Dec 1775 refers to an auction to be held at "... the Star, at Appleton near Oxford and Abingdon...". Is this a "lost" pub, the Plough/ Horsehoes renamed or a pub in the locale?"dyfal donc a dyr y garreg"

Plough Inn, 1888
I've just come across this TNA reference to an 1888 photo held by English Heritage Archive: https://discovery.nationalarchives.go...a-d025449f8a17. But you have probably seen that?
Had been going to suggest you try the Appleton One Place Study - but now I see you are the Appleton One Place Study!
Good luck with your researches.

thanks for those suggestions. I had most of that covered, but did find one or two other leads from them.
I think the star was either another name for the Plough (based on constellations) as none of the locals can recall it ever being anything other than the plough, and relatives of landlord right back to 1880's still living in village, or it maybe a misprint for appleford which I think has a pub nearby called the star.
Appleton has had 3 pubs in my live time : The Plough, the Three Horseshoes, The Thatched Tavern, and the associated village of Eaton has The Eight Bells.
in earlier times there were I think a couple of others on the river just outside the village (may have just been beerhouses though) Mention of the Ark along by Harts weir and I have also seen mention of the Fish but have not tracked that down.

Re "...on the river just outside the village...." the Oxford Journal 6 Apr 1776 mentions "... the Star at Appleton, Berks (near the River and within 3 miles of Abingdon...)"

Google Books
Though they may not mention the pubs, these two ebooks - free via Google Books - will help build up the historical background. They are from 1817 and 1839:

One is posted twice - sorry! - because I cannot tell from the clipboard which is which.
Off to roost.
