So at this stage Martha Jane and George are using their stepfather's name.
George having put his father's name as John on his marriage certificate means 'zilch.' Illegitimate children very often made up the name of a father to remove the stigma of illegitimacy.
The birth certificates would sort it out and Ann and Richard's marriage certificate but as they are not of great importance in the family tree this one could remain a mystery.

Have you followed this Ann through the censuses to see if she is relevant? I know she is baptized in London but they may have moved when Ann was young so she gives her birthplace as the first place she remembers living in.

That seems to be her in 1861, she was at Back of Scotts Arms, Darleston Street, Wednesbury in 1871. There is no mention of Martha Jane, but George is shown as "wifes son".
The Ann baptised Shoreditch 1833 appears to be the daughter of George and Ann Davis. She died in 1871 and was buried in Victoria Park Cemetery on 31 Oct 1871
