Would the cathedral accounts of the time still exist? They may contain records of workmen and payments made etc. May be worthwhile contacting them.

Cambridge University, Newton Library holds records of the Ely Dean & Chapter Archives.

The fifth paragraph on THIS PAGE (http://www.lib.cam.ac.uk/MSS/Edc.html) appears to cover the details of your search. However, access to these records is another thing, unless you are, or know of, a member who can log in.

The records can be searched in person by eligible people as outlined in THIS PAGE (http://www.lib.cam.ac.uk/admissions/), and there is a fee.
