does anyone have any idea where I can get a early pre-1900 (ish) or anytime of an early period of map of Cheshunt from.

Try British history website and then click on particular area you are interested in to magnify:

That gives 1890 map

There's a webiste called Old Maps which has the 1st edition (mid 19th century) OS maps on it.
