I have found on the 1911 census that a relative, Ethel Soper, was the licencee. She was a widow and I think she may have taken over from her husband Percy.
Where can I find details of who held the licence and for how long and, although I know a little about the pub does anyone have any info?

According to the 1902 Post Office Directory,
The publican of the Ye Old Cheshire Cheese, 23 Addle St, Wood Street. EC was a John Hay.

First, have you identified which Old Cheshire Cheese it is that your ancestor ran:

Old Cheshire Cheese, 5 West Side Market, Spitalfields
Old Cheshire Cheese, 16 Wine Office Court, Fleet Street, Holy Trinity Less, City of London
Old Cheshire Cheese, 5 Little Essex Street, St Clement Danes
Old Cheshire Cheese, 61 Mount Pleasant, Holborn

Plus the one that Mutley listed.

It may also have dropped the "Old":

Cheshire Cheese, Crutchedfriars
Cheshire Cheese, 51 Gros. Row, Pimlico
Cheshire Cheese, 10 Surrey Street, Strand
Cheshire Cheese, 10 Cross Court, Russell Street, Drury Lane

Good luck! :o

The pub is the one in Little Essex Street. Are there any records on line?

The Old London Pubs (http://deadpubs.co.uk/LondonPubs/ClementsDanes/CheshineCheese.shtml) website has some information - and a photograph!

I don't know if there are on-line records other than the site Jan gave that has her there in 1899.

The 1902 Post Office Directory has the Licencee of the Old Cheshire Cheese (without the Ye) at Little Essex Street as Mrs. Charlotte Elizabeth Savage.

It is definitely Savage, I wonder if she remarried or have they made a mistake? It is there twice, both under the street directory and the trade directory.

Bingo... A marriage registration for Charlotte Elizabeth Soper, Strand, Dec 1899 has on the same page William Gilbert Savage. 1b/1208 :)

The 1901 census shows Charlotte Elizabeth Savage as the Licensee of the Cheshire Cheese pub in Milford Lane and her son Percy as a barman. The 1910 PO directory shows Percy but at the pub in Little Essex Street and the 1911 census, following Percy's death, shows his widow Ethel Alice as the licensee.
By 1915 she had remarried and is shown in the PO directory of that year as Mrs Ethel Wood.
The pieces of the puzzle are beginning to fit but I find it coincidental that the family were involved in 2 pubs of the same name so close together.

Have just had a look at the London A-Z and Little Essex St is a very short road branching off Milford Lane. If the pub is on the corner, it could be the same pub but for some reason the address is given differently.
