I can't find them on the 1851 census either. There is a single William Marylees born 1818 at Newbury, occupation coachman.

    I also found this

    [Willm. Merrilees
    Date of Trial:
    1 Jan 1855
    Trial in London, England
    Larceny by a servant
    Sentence - Imprisonment
    Then says 3 ?? (I can't read it)]

Not your man, found the full record on fmp and this one born 1802., could be your man's father I suppose. He stole 35 pounds of metal type value 30 shillings from his employers. 3 months in house of correction.

What was William's occupation in Australia?

There is a mention on TROVE 1856 stating a William MERRILIES was second officer on the brig MISSIE.
An article in 1942 for Williams son states William was a ship wright.

There's quite a few mentions of William using the variations of his surname. I'll have another look when I get home and see if there are any clues.
