Anyone know anything about the Haydon and Ellis families in Bradninch? Especially interested in Sarah's siblings, including Eliza Mary Ellis, my ancestor, who ended up in NZ (as did her brothers John Ashford and Peter).

FindmyPast have the parish register transcriptions for the baptisms of Sarah, William, John & Eliza Mary ELLIS at Bradninch. They also have a marriage in 1830 for a John ELLIS to a Grace which may be relevant. It is a pay per view site, but they do have quite a lot of Devon records so may be useful to you.
Eliza Mary is in the 1861 census of Nursling, Hampshire (RG9/685, folio 177, page 1) working as a Cook in the household of John SWINBORNE and family.

John Ashford Ellis first appears on the NZ electoral rolls in 1870/71. Lincoln Road Christchurch so an indicator of when he, at least, left England.

On Trove newspapers there is a government notice in the Wanganui Herald 1 Nov 1890 asking John Ashford Ellis to show cause why he shouldn't be removed from the districts electoral rolls. So he started out in the North island and then moved down south.
The interesting article is the one in the Star 28 August 1895 where John and Peter are involved in a court case over ownership of land. The interesting bit is when there is reference as to whether Peter's bankruptcy proceeding in Victoria Australia will have an effect on the bankruptcy proceedings in NZ
So Peter at least went to OZ first.
