While not being able to help with Eliza Hunt’s parents (I'll leave that to someone with more brain cells then me), I have been able to find the baptism for Louisa.

Is this an announcement of Eliza's death on Trove?

THE FRIENDS of Mr CHARLES GILL are respectfully invited to attend the Funeral of his late beloved WIFE, Eliza, to move from his residence, Redfern and Elizabeth streets, Redfern, THIS (Friday) AFTERNOON, at 2 o'clock, to Necropolis. C. KINSELA and SONS. George-street, opposite Christ Church, and Oxford-street, near Crown-street.

The Sydney Morning Herald, Friday 17 October 1879

A related entry from the NSW BDM index...

3281/1879 GILL ELIZA CHARLES EMMA REDFERN

If so, her parent's are recorded as Charles and Emma - but death certificates can be unreliable. In your shoes, I would get hold of Eliza’s marriage certificate to see what it has for her father’s name.

As olliecat has already pointed out while I've been typing this, a good place to start would be to send off for a copy of their marriage certificate, which you can do via the GRO.

The marriage was not necessarily in Swindon itself, but in the Swindon registration district (also known as 'Swindon & Highworth', or 'Highworth & Swindon', or just Highworth!). Here's a list of the parishes in that district:

    If this has legs then:

Amy Hunt appears to be here on the 1851 Census: HO107 Piece 1834 f. 246 p. 7. As John isn’t there and is a postman, he may be the John Hunt boarding with the Martin’s in Swindon here: HO107 Piece 1833 f. 530 p. 42.

Amy is in the 1861 census living with her son Francis in Purton. She is enumerated as EMMA: RG09 Piece 1275 f. 37 p. 10
John isn’t there again but he may be living in Swindon here: RG09 Piece 1271 f. 103 p. 20

Found this on another site, looks like the searcher has the marriage cert.

"I am tracing Eliza Hunt, born at Purton Wiltshire in 1828 - she married at HIghworth/Swindon in 1849 to Charles Gill.
She gave her father as John Hunt, Cordswainer (shoemaker) - IGI gives his wife as Amy KINNETT of Purton.
    "

There seems to be 2 marriage dates for John HUNT and Amy KINNETT

4 Apr 1825 Purton, Wiltshire, England

10 Apr 1825 Purton, Wiltshire, England

    From this page ...

    https://
    genforum.genealogy.com/wiltshire/messages/416.html

"It says that Eliza gave her father's name as John Hunt, Cordswainer (shoemaker)."

I'm sure we would all still recommend that you get hold of a copy of her marriage certificate. In the meantime, we could investigate John HUNT and Amy, mentioned by Malcolm in post #3.

I see Terry got there first.

Not really significant at the moment but in case I forget, there's a gravestone photograph site for Purton. Only a couple of Hunts and a handful of Kinnetts but it may come in useful sometime later in the century:
