ommelette is easy,
heat pan
2 eggs, whisk, drop of COLD water, not milk [milk makes the eggs curdle]
sauté garlic (ie make it sweat), add chopped onion,
two eggs, whisk vigously and pour into pan, add mushrooms, tinned tuna, dash of chilli, dash of Chardonay, NO SALT, and enjoy ...
