Not bored at all, Val. Puzzled but not bored! Have you looked at the 1871 or 1861 census for Sarah?
There are two Sarah QUIRKs in 1871 who could match yours but neither was born in 1855.
One Sarah was born about 1852 in Sheffield. She is living with her family -- parents James and Sarah, both born in Ireland, and siblings Mary Ann, James and Jane. Father is a bricklayer's labourer.
The other was born in 1853 in Sheffield. She is a domestic servant living with a family named Ward in Sheffield.
Going back to 1861, there's only one apparent candidate -- the 1852 Sarah. At this time, father James is working as a gardener.
I can supply the details if anything looks promising to you...
There aren't that many QUIRKs in Sheffield in these two censuses and most of the household heads and wives seem to have been born in Ireland.

I've been having a little look too, and came up with the same Quirks on the census.
Have you the birth certificate for Sarah, as that will provide you with some more information, mother's maiden name etc;
I had a quick look on FreeBMD, and there is a Sarah born in Sheffield in 1851, not 1855, but dates can sometimes be unreliable, if you haven't already got her certificate, then a search in the Records Office, or online at 1837 online, should turn up the reference for the correct event.
How about the father's name on Sarah & Walters' marriage certificate? If you haven't already got that one, I've found the reference

Have you any information on which county in Ireland to concentrate your search for Quirks, as I'm finding searching for Irish connections a real challenge.

I beleive Sarah Quirk could have been born 1853 . I have found a distant relative who says her mothers name was Sarah Dunn , her father was James Quirk born 1824 Ireland .
