I have recently found a possible record of a missing ancester living in Castle Street, St Andrew Holborn in 1871. Now I would like to find him in that year's census to check it is the right one. I have tried looking under his name but got nowhere so I am trying to find him in that street. In the National archives there are refs for 2 different Castle Street Holborns, but when I look them up one is St Luke Finsbury and the other is St Leonard Shoreditch, not even Holborn. I don't know the house number so it will be very difficult to know if I have the right street
Does anyone know if either is the right street, or how to find it?

Looking at an 1883 map of Holborn, Castle Street is placed as follows:
Walking east along High Holborn, Chancery Lane appears on your right. The next turning on the right is South Road and then Grays Inn Road appears on the left. The next road on the right is Castle Street. If you get to Leather Lane on the left and Fetter Lane on the right, then you have gone too far. Looking on Google Maps, where Castle Street no longer appears, it would have been opposite(ish) Brooke Street, which still exists.
On Google Maps, there is Furnival Street, which seems to be where Castle Street once was. I wonder if it was renamed as, towards the bottom of this road is the Castle Pub.
Maybe those streets that I have mentioned will help you to follow the enumerator's walk on Census collection day.

Jan's placed it exactly. The Castle Street you want starts at RG10 Piece 423 fol. 60 p. 34

Scroll to the bottom of the page and in the Left Hand margin you’ll see Tooks. Castle Street is next to this and the church of St Andrew Holborn is just to the right on Holborn Hill.

Suggested tips for when you're stuck in the future...
Don't ignore TNA catalogue. In this case, searching for Holborn under RG 10 would quickly reveal, if you didn't already know it, that St Andrew Holborn spanned two registration districts - Holborn and London City. When you look under London City, you find that the street you want is indeed listed on the following page -
