    Hi Margie,
Do I presume that you have Esther's maiden name from the birth certificate of Esther junior's birth certificate?
If so, that is not a guarantee that Esther senior is also John's mother. She may have died and Esther is Joseph's second (or even third!) wife.
Unless of course you have the PR baptism entry for John which says 'son of Joseph and Esther'.

In both the 1851 and 1861 census where Joseph, Esther, and Esther junior are living in Winstanley, they claim that's where they were born. In 1841 they're living in Wigan.

I'm not familiar with Lanacashire but it seems that Winstanley is the name of the civil parish, Billinge is the name of the ecclesiastical parish.
Church of England parish registers for Wigan and Billinge are held at Wigan Archives, not too far away from you. As are non-conformist records for the area.
I think it's a case of just taking each register in turn and working your way through them, though it may be possible to eliminate some of the registers by using the Lancashire Online Parish Clerks. http://www.

(Personally, when searching the PRs, I would start with baptisms, as that will tell you the first name of the mother of the various children, and you'll know how many marriages you have to look for!)

Have checked the Lan-opc and can find nothing that relates to the above, will carry on looking.
