THis looks like them minus Josiah. Birth places and dates match for William and George with later census.

Been trying to figure out which of Josiah/Mary's children could be Harriet's parents.
So far, it looks like...
Daughter Harriet Firmin (born abt 1843 in shoreditch) married Samuel Glover in 1882 at Upper Holloway St John.
Samuel Glover, 42, widower, carpenter, 82 Elthorne Rd, father William Glover (deceased), ??
Harriet Firmin, 39, spinster, 82 Elthorne Rd, father Josiah Daniel Firmin, smith
Witnesses: Henry Shannon?, Harriet Anne Firmen???
Note: For some reason, I can't get the image to zoom past 100% and so cannot read William Glover's occupation or the witness names properly. Perhaps someone else can check this.
Looks like Samuel and Harriet are In the 1891 census:
1891: RG12 Piece: 187 Folio: 115 Page: 10 (crown copyright, care of the TNA)
However, I suspect Harriet and Samuel were living together before the 1882 marriage.
1881: RG11 Piece: 247 Folio: 64 Page: 10 (crown copyright, care of the TNA)
There is also a daughter Harriet A Glover born 1864 in Lambeth. So I'm wondering if this is the Harriet Mathers you found in the 1871 census. This is just a suspicion and further work is needed on this.
Possibly Harriet in 1911.

Checking out daughter Mary Ann Firmin to see if she is likely to be Harriet Mathers mum.
Looks like she married Benjamin Carr in 1854 at Bethnal Green St James the Less.
Benjamin Carr, full, bachelor, gas fitter, 50 Fuller St, Joseph Carr, painter
Mary Ann Firmin, full, spinster, 16 Hare St, Josiah Carr, smith
Witnesses: Thomas Dixon, Joseph Titchener
This could be them in the census:
1861: RG09 Piece: 202 Folio: 89 Page: 31 (crown copyright, care of the TNA)
1871: RG10 Piece: 495 Folio: 83 Page: 31 (crown copyright, care of the TNA)
1881: RG11 Piece: 1730 Folio: 163 Page: 110 (crown copyright, care of the TNA)
No sign of a daughter Harriet.

Baptisms have been transcribed on FreeREG for the following...
- Little Maplestead, St John the Baptist, 1690-1829
- Great Maplestead, St Giles, 1697-1812

Unfortunately, the dates covered for Great Maplestead fall short of the date you are interested in.
