I have been searching my info to find sources for my ancestors and this is what I found to date.
On the 1851 Census

Hilder Ridley Thos Son 6 1845 Scholar at home Cockfield Suffolk
Hilder Earnest Alfred Son 4 1847 Scholar at home Cockfield Suffolk
Hilder Charlotte Elizabeth Dau 1 1850 Woking Surry
On the LDS site I found Edward Hilder( DOB 1814,DOD 1894) married to Mary Ridley (DOB 1819, DOD 1887). They were married @1839 at Northgate England but the children are Edward 1840-1842
Ridley 1847, Charlotte 1840, then Clara 1853,Alice 1857. Edward's (DOB 1814) parents were listed as Richard Hilder and Ann Challis and his wife Mary Ridley.
Any help would be appreciated!

Have you come across the discussion on Ancestry's message boards called 'The Hilder family of Tasmania'? One of the contributors to the thread is descended from Richard Hilder and Ann Challis from Cockfield, and has evidently done much research on the family.

All born Suffolk.
Note: It looks like Edward Hilder, Mary and their 1 month old child Mary are in Old Hall Green, Cockfield in 1841.

There are two public trees on Ancestry that seem to include Edward.
In 1841 he and Mary have a daughter Mary aged 1 month so born about 1841.
HO107/1011 Book 10, F.?, P.1
In 1851 (as you have found) they have (spellings as transcriptions)
Mary Heph, 1842
Edward, 1843
Thos Ridley, 1845
Earnest Alfred, 1847
Charlott Elizabeth (without an age)
HO107/1594 F.95, P1
In 1861 they have
Earnest A, 1847
Charlott E, 1850
Alice, 1853
Eliza C, 1854
Ann C, 1857

Death announcement from the Ipswich Journal, 29 April 1843:
'22nd inst., aged 66, Ann, wife of Mr. Richard Hilder, farmer, of Cockfield.'
And another from the Bury and Norwich Post, and Suffolk Herald, 1 Jan. 1851:
'On the 30th inst., at Cockfield Church House, near this town, Mr. Richard Hilder, late of Old Hall Green Farm, in the 81st year of his age, leaving four sons and two daughters to lament their loss.' 'On the same day [i.e. 'On Sunday last'], in her 88th year, after a long and painful affliction, Catherine, the wife of Mr. Richard Hilder, sen. of Cockfield Cottage.'

'On Thursday last, in his 85th year, Richard Hilder, Gent. of Cockfield Cottage, whose mild and gentle manners had gained him the highest respect of his relatives and friends.'
