I an having trouble locating any birth information for the above. From her marriage certificate in 1842 her father is named as Stephen Jackson, Clerk.
As always will be grateful for any help.

You should be able to buy a transcript of the PRs published by Oxon FHS. Alternatively as you just live in Enfield, pop into the Society of Genealogists Library where there is a copy on the shelves...

I don't have access but in some FMP censuses she appears to give somewhere other than Woodstock for place of birth.

I've just found the 1911 Census on FMP (mistranscribed as Charan) and it shows the birthplace as Brimmingham?
The 1901 Census shows Oxford, Oxon, the 1891 Census shows Woodstock, 1881 Woodstock, 1871 Woodstock, 1861 Oxfordshire.
I've never been able to find the family on the 1851 Census.
Anybody know of Brimmingham?

From Oxfordshire FHS PR Transcripts of Woodstock:
23 July 1817 William JACKSON son Stephen & Ellen Sarah, Clerk
5 February 1819 Mary Ann JACKSON daughter of Stephen & Ellen Sarah, Clerk
No marriage on the Oxfordshire Marriage Index for Stephen & Ellen Sarah.
Brother William appears to have married a Lucy C and he has obviously followed in his father's footsteps as in the 1851 census of Exeter St Sidwell he is shown as a Retired Clergyman! You should hopefully be able to follow him through census records and find details of his graduation as a clergyman which may lead you to father Stephen.
Now I don't know how relevant this may turn out to be (if at all) but on Family Search Pilot site, there is a marriage on 5 August 1816 at St Olave, York of a Stephen JACKSON & an Ellen Sarah BENSON. This shows Stephen's age as 24 and Ellen's as 25.

Thanks Janet that's really helped. Lucy C is Lucy Catherine Hatchett and Hatchett is a name that has popped up in connection with Mary Ann J. I am working on the connection.

Well, it's been really interesting. I haven't got any further back with the Jacksons (Stephen and Ellen Sarah nee Benson) but Lucy Catherine Hatchett married William Jackson (Mary Ann's brother) and she is descended from an eminent scientist Charles Hatchett FRS 1765-1847 chemist and discoverer of niobium.
The link to the Hatchetts and Jacksons came initially from the Ay collection of Andrews newspaper cuttings and these are certainly worth more than a passing glimpse.
