Any idea how I might find out where and with whom he could have been posted? I'm useless at military.

I've now looked at the TNA and don't think I found anything about George's military life. Very complicated site.

A belated update.

I finally found George's army records from 1886-1894.
He was mostly in India and was indeed quite poorly on several occasions - but no sign of a monkey bite, although that is not to say that it didn't happen!!
