It looks from this link that it was a scottish ship around 1700, as after this no other ship held the name till ww2:

The first Dumbarton Castle was a 6th rate 24-gun ship that flew the Scottish Flag until transferred to the 'British' Navy on 29 November 1707. She was captured on 26th April 1708 by the French off Waterford (a certain amount of irony there).
The next Dumbarton Castle was a Castle class corvette built by Caledon Shipbuilders on 28th Sept 1943. She was broken up in March 1961 at Gateshead.
The current Dumbarton Castle is a patrol vessel built by Hall Russell on 3rd June 1981.
Info from the revised edition of Colledge's Ships of the Royal Navy.
It would seem as if the Scottish one would fit (especially given the surname of the gunner). Not sure about the 1871 date as no naval vessel fits, but Colledge doesn't include vessels used by the Customs service that could also use Navy or ex-Navy sailors.
