Well I can see her in the 1881 census with Joseph and young John Prime.
RG11; Piece: 1412; Folio: 91; Page: 56
They are still in Royston, Herts so her death would be after that date when she states she is 47 years old.
They lived in the High Street and Joseph was a Marine Store and General Dealer.
I cannot see either of them after the 1881 census. If he had a shop have you tried Trade Directories to see if he moved?

So, the only possible death, if she stayed in the same area is
Mary Coote June 1906 age 79 (so born 1827) in Royston.
3a/314, Age is a bit out 6/7 years but it depends who registered the death, did they know her exact age?
If that is her, she should appear in the 1891 and 1901 census and I cannot see her, maybe others can.
I'll keep a look out.

I did wonder if she could have remarried.
I've looked at 1891 and 1901 Mary A *** born Horncastle in 1834+/-2 but I cannot find a matching marriage of a Mary Ann Coote to any of the census husbands. So that idea may not be any good.
I was surprised how many Mary Anns were born in that time frame in Horncastle.
Sorry.
