How would I go about finding out someone's baptism records, when I'm unsure of the church they would have been baptised in?

That depends on what you know and the time period of the baptism.
A post 1837 baptism may be traced (if one took place) by using the GRO index to find where the birth was registered this could point to the baptism parish
Alternatively use the census, the 1851 for example could help with baptisms as far back as 1760 or so.
There may be mentions in wills where a person is living always a useful starting point.
However all approachs carry a certain amount of trail and error though perseverance will conquer all.

I really hope you manage to find the Baptisms you're looking for. I'm still very upset all these years later, after finding out that my maternal Gt. Grandparents had all their five sons baptised at the same Church, but not the three daughters born *in between them* ...... my Grandma being one of them. :(
