Could some one point me in the direction of how to look for Stonemason Apprentice Records for Ayrshire between 1840-1860.

Unless someone with specific knowledge of Scottish records knows better, apprenticeship indentures were generally private agreements between individuals and have often not survived.

If someone was apprenticed to a company, there may be some information in company records; which may have been deposited with a record office.

You might try a search of the catalogue for the National Archives of Scotland (http://www.nas.gov.uk/)
