I have been doing some research on my "baker" ancestors from Redditch (the James Family) and have come across some interesting sites that may be helpful to others researching bakers and confectioners.

Here are a couple of additional sources for information about bakers:

Chapter VII, "A Night in a Bakehouse" in Charles M. Davies, Mystic London: or, Phases of Occult Life in the Metropolis (London: Tinsley Brothers, 1875). This book describes unusual parts of London and includes a chapter on a typical night's work for bakers. This is available on the "Victorian Dictionary" site at victorianlondon.org/publications7/mystic-05.htm

There is much more detailed information in the testimony collected in the "Report addressed to Her Majesty's Principal Secretary of State for the Home Department, relative to the Grievances complained of by the Journeymen Bakers," in 47 Accounts and Papers of the House of Commons, vol. 19 (1862).
