On my grandmothers birth certificate it states her father William Baker
as being a carman or Catman
Any one have any ideas?

Hi Saja

Carman/Charman/Carrier/Carter Driver of (horse-drawn) vehicles for transporting goods. Carmen were often employed by railway companies for local deliveries and collections of goods and parcels. Modern day van driver. Also sometimes someone who drove horse-drawn trams was called a Carman.

You might also try googling for the
Worshipful company of carmen.
They were a livery company in London and keep old records if your ancestor was working in London
