Peter Dunn

I've got back to 1826 to the marriage of my ggg grandfather John Dunn (widower) and his wife Ann (nee Wiliams), both "of full age", at St Pancras Old Church. Their address: Little George Street (was near North Gower Street), but no longer there.
The 1851 census shows John as being in St Pancras Workhouse (age 71, b. Kildare) - he entered there in 1848. Ann Dunn is also shown (age 64 b. Lambeth). John died in January 1862, in the Workhouse Infirmary. Ann died in Nov.1862, at 15 Chapel Street, Islington.
They had two sons : William (b.1826), my gg grandafther, and Thomas (b.1829) : the 1829 address is shown as Cousins Street, but I've been unable to trace that street name in the area or anywhere in London at that time (I've checked the changed street names list and also the "A-Z" style book of the period). Both sons were baptised at St Pancras Old Church.
The 1851 census shows William and his wife and sons at 16 Wharton Street (now in LB Islington) - not far from the St Pancras area.
I have been trying for ages to fill in the 'missing' years between 1829 (including Cousins Street itself) and 1851, as far as the location of the family. I have the 1841 Middlesex Census on CD ROM, for St Pancras and other parts of, what is now London. I've searched through the pages for St Pancras and nearby possible areas, but no joy. A number of pages or parts of pages are illegible, being too faint, so it's possible that they may be there anyway. I'm assuming it likely that they remained in the St Pancras area, due to the 1851 census entries.
Given that there isn't a surname index for the 1841 census, I would appreciate any suggestions as to how I might trace the family either in 1841 or between 1829 and 1850. It may be that I've tried everything anyway, but any help will be very welcome.
