Is his wife shown as a widow in 1861?
Did William MILES leave a will? You might try pre-1858 PCC wills to begin with, which can be searched and downloaded from documentsonline (http://www.nationalarchives.gov.uk/documentsonline/browse-refine.asp?CatID=6&searchType=browserefine&pagenumber=1&query=*&queryType=1)
Does William turn up in any directories?

Being in business, it is possible that William MILES may be mentioned in the London Gazette (http://www.londongazette.co.uk/home.aspx?GeoType=London) though you may get quite a few hits as the surname occurs quite frequently, I suggest a search using the exact phrase "William Miles".
