You presumably have this family living in a certain locality and believe one/both came from Rutland. The problem now is tying down a parish/group of parishes so that you can see if the registers exist for this period and if they record a baptism.
The first problem is that many registers are mostly empty for the period of the inter-regnum and this event is towards the end of that period.
One possible course of action is to se if the Hearth Tax Returns for the area have been transcribed and indexed - they form what is in effect a directory, or census of families. If you find a cluster of DEXTERs in a few local parishes in Rutland then they may be worth checking first.
Having worked your way through parish registers back to this period, you may have to work at the handwriting as the transitional foms of Secretary hand can take a while to get used to and there are often local variations.
Do you know what William DEXTER did for a living, is his dad likely to have left a will which can give you some clues. There may be a published index to probate records for the ecclesiastical court covering Rutland and this may again help to identify which part of the county is worth further viewing of parish records/ manor records, etc.
