I'm looking for Benjamin Selby and his wife Sarah. They were born around 1799-1801 from other census returns, mostly in Cheshunt. Was Sarah born in county? They married 24th July 1819 and had 8 children so quite a few should be at home in 1841.

Just on a minor geographical point from a 6th generation "Hoddesdonian": they were in Lord Street, Gt. Amwell in 1841, and in 1851 they were in "Lords Lane, Hoddesdon". No, they didn't move house. The hamlet and chapelry of Hoddesdon grew rapidly in the mid C19, totally overshadowing its more rural neighbours Gt Amwell to the North and Broxbourne to the South. Lord Street, Hoddesdon, as it is now known is South of the town centre. As one of the first stops on the coaching route from London through Cambridge to York, it vied with Ware for the boast of the largest number of inns per mile of high road.
The whole area, including the towns of Hoddesdon and Cheshunt, has now been "homogenised" into the borough of Broxbourne, the village whichsits between the two.
